El núcleo del vino rosado se encuentra en el sur de Francia, a orillas del Mediterráneo, en regiones vitivinícolas como la Provenza, donde la elaboración del vino rosado es toda una especialidad, y es que el clima, los suelos y las variedades de uva de la región son perfectos para la elaboración del vino rosado. El saber hacer de sus productores de vino y sus años de experiencia, hace que ninguna región sea más conocida por este tipo de productos que la Provenza.

Por regla general el vino rosado proviene exclusivamente de una variedad de uvas rojas. Debido a su tono, su aroma y su textura, los vinos rosados pueden parecer una combinación entre el vino tinto y el vino blanco, sin embargo, su origen se aleja mucho de esta percepción, el color de los vinos rosados es todo un secreto.

Los vinos rosados presentan una amplia paleta de colores, desde ese anaranjado peculiar similar al salmón, hasta tonos más violetas como el pétalo de una rosa. Los pigmentos contenidos en la película de las uvas tintas caracterizan a los vinos rosados de tan peculiar color. El color de un vino rosado, por tanto, dependerá de la duración y de la temperatura durante el contacto entre el jugo de uva, que es casi incoloro, y las pieles de la uva durante el tiempo de maceración. Cuanto más tiempo esté la piel de la uva en contacto con el vino, más oscuro es el color de un vino rosado.

Así pues, cuando hablamos de un vino rosado de lágrima, nos encontramos ante un mosto que ha sido extraído sin ejercer presión sobre la uva, de forma natural, debido a la gravedad que ofrecen unos racimos sobre otros.

Los métodos utilizados para elaboración de esta variedad vitivinícola pueden ser muy diversos. El método Saignée surge como subproducto a raíz de la fermentación del vino tinto. El productor, durante la maceración del vino tinto, retira del depósito un 10% del jugo, de manera que, por un lado, obtenemos un vino tinto más concentrado, y por otro un vino rosado cuyo color se caracteriza por ser más intenso, sabroso y duradero. La variedad de uva tradicional utilizada en esta técnica es la Garnacha aunque también son utilizadas en menor cantidad la Merlot y la Cabernet Sauvignon.

Por otro lado, encontramos el vino rosado obtenido por maceración, quizá el método más tradicional, donde en lugar de prensar la uva, el jugo se deja con la piel durante un periodo corto de tiempo, para conseguir el color y tinte de las pieles antes de retirarlas. Las variedades de uva utilizadas en este método son la Syrah o la Cabernet Sauvignon, para vinos rosados más concentrados, o la Garnacha, para aquellos más ligeros.

Por último, cabe destacar el vino rosado por Vin gris, proceso a través del cual se usan las uvas tintas para hacer un vino rosado muy claro, más similar al vino blanco que al vino tinto. Este tipo de vino suele ser color salmón, poco intenso, elaborado a partir del despojo de la uva tinta del delhollejo, donde las uvas son directamente prensadas y se aplica un tiempo de maceración muy corto para minimizar la extracción de color de los hollejos.

Entre los vinos de Bodegas Isidro Milagro, encontramos el rosado Finca Besaya, fermentado en depósitos de acero inoxidable con control de temperatura y maceración en lías, a través de un cuidadoso proceso de selección de uvas y elaboración mediante sangrado, de uva Tempranillo y Garnacha.
